Quick, easy and delicious, perfect for making after a long day of work. Packed full of good nutrition!


400 grams chicken breasts

2 Tbsp reduced-sodium soy sauce
1 1/2 tsp chilli-garlic sauce, (or enough for your preferred taste)
1 tsp minced fresh ginger
2 tsp minced garlic
1/2 cup smooth peanut butter
200g spaghetti
300 grams fresh vegetable medley (e.g. snow peas/carrots/broccoli)

In a large pan begin boiling water ready for the pasta. Meanwhile, put the chicken in a saucepan with enough water to cover, once boiling cover and reduce the head to a simmer until the chicken is cooked through (~10 mins). Leave the chicken to cool and when cold enough tear into strips.

Whisk the chilli-garlic sauce, garlic, peanut butter, ginger, soy sauce in a big bowl.

Once the pasta is near ready (~ 1-2min less than the directions recommend), add the vegetables and cook until everything is tender (another minute or so). Drain off the excess fluid leaving ~ 1 cups worth of water in the pan. Stir the left over water into the peanut sauce and add the remaining veggies, pasta and chicken. Mix the ingredients together and serve J
